Both promise the same thing — hands-off cooking that turns tough cuts of meat into tender, flavor-rich meals. Both have passionate followings. And both have been part of American kitchens for decades, the slow cooker since Rival introduced the Crock-Pot in 1971 and the Dutch oven since colonial-era hearth cooking. But they are not the same tool, and choosing the wrong one for a specific task can mean the difference between a remarkable dish and a merely adequate one.

We tested a Texas-style beef chili — no beans, just chunks of chuck, dried chilis, tomatoes, cumin, garlic, and Mexican oregano. The Dutch oven version involved browning the meat in batches, toasting the dried chilis, and simmering for two hours uncovered to reduce the liquid. The slow cooker version was cooked on Low for eight hours with the lid on.

The Dutch oven chili was substantially better in our testing. The browned meat had a depth of flavor the slow cooker version lacked entirely. A slow cooker cannot reach these temperatures. We did test a slow cooker bread recipe — a soft sandwich loaf cooked on High for two and a half hours — and it produced an acceptable but unremarkable loaf with a pale, soft crust and a slightly gummy interior. It costs a fraction of a Dutch oven and operates at a fraction of the energy cost.

If you can only own one, buy a Dutch oven. It can do everything a slow cooker does — with more effort and attention — plus many things a slow cooker cannot. But if you have the cabinet space for both, keep both. Each earns its place in a well-equipped American kitchen for entirely different reasons, and the cook who understands when to reach for each one will produce better meals with less frustration than the cook who tries to make one tool do everything.
